Ebulum (Unhopped Elderberry Ale, 1744)

Attractive in its own way. Resembles some Belgian Fruit Beers.
4 lb Pale Malt
1 1/2 lb Ripe Fresh Elderberries
Use method 2(b) to produce one gallon of wort at OG 100 (or dissolve light malt powder in water to give the same). Add the elderberries. Boil for 20 minutes; cool and strain. Ferment with ale yeast.
Mature for at least 6 months.
